When a cold, dreary day needs a bit of spark try adding a bit of zeal to an old time breakfast favorite. Gluten Free Oatmeal topped with Apple Compote might just warm-up your day.
Gluten/Wheat Free, Kid Friendly, Vegetarian, Vegan, Dairy FreeApple Compote
2 medium apples, peeled and diced (Stayman Winesap is my favorite)
3 tablespoons or so of brown sugar
2 tsp corn starch
1 tsp cinnamon
1+ tsp lemon juice
dash of salt, cloves & allspice
water
Mix & heat the first 6 ingredients in a saucepan over medium heat until apples become soft. Slowly add in water, a little at a time, allowing the mixture to thicken each time. Add enough water to make a little sauce that will aid in flavoring the oatmeal. (made enough to generously top 4 bowls of oatmeal)
Oatmeal
Prepare the Gluten Free Oats according to package. Top with Apple Compote and serve warm.
