I know, it is confusing when a gluten free flour actually has the word "wheat" in its name. But rest assured that buckwheat is not a grain, cereal or grass and does not contain any gluten.
When eating these pancakes you may actually be eating for your health as well as your taste buds. Buckwheat is believed to help the liver function, decrease cholesterol, decrease blood pressure, and treat Type II diabetes.
Buckwheat Pancakes
Gluten/Wheat Free, Kid Friendly, Dairy Free Option, VegetarianDry Ingredients:
3/4 cup buckwheat flour
1/4 cup tapioca flour
2 tablespoons sugar
1 teaspoon baking powder
1/2 teaspoon salt
Wet Ingredients:
1 egg
3/4 cup milk or milk substitute
2 tablespoons oil
Optional Ingredients:
Mashed Banana & Cinnamon
Blueberries
Diced Apples & Cinnamon
Whisk all dry ingredients together. Add wet ingredients. Ladle pancake size proportions onto preheated and lightly greased griddle or large skillet. Once bubbles start to break on the surface flip and cook a minute or two more until golden brown.
