Today we had time (and no thunderstorm) to cook dinner at the campsite. Hurray! On the menu: Sweet & Sour Chicken. Who said camping had to be just hot dogs? Seriously, why limit yourself?
This recipe is one I make at home on the BBQ, but find it is very easy to adapt to a fire pit. I used skewers and (of course) foil. If you do not have skewers with you just double up some foil bending the ends up like a baking sheet, coat with some oil and place in chunks of chicken & onion on the fire grate. Add peppers and pineapple later.
Sweet & Sour Chicken
2-3 chicken breasts
1 small sweet onion
1 red & 1 green bell pepper
Fresh pineapple chunks
1 bottle of Mr. Spice Organic Sweet & Sour Sauce
Gluten free soy sauce
Salt (optional)
Cut chicken breasts into cubes or sliced into strips. Cut onion, peppers and pineapple into large chunks. Skew a combination of chicken and onion on bamboo sticks, sprinkle with soy sauce and salt. Skew a combo of peppers and pineapple on other sticks and set aside.
(Cooking note: the reason for separate skewers - chicken & onions cook at a different speed then the pineapple & peppers. I like the pineapple & peppers cooked not soggy.)
Place chicken & onion skewers over campfire or on a BBQ. When chicken is almost completely cooked add the pepper & pineapple to fire or BBQ, cook until peppers are tender and pineapple warm. (I like to cook these skewers on top of the chicken skewers to add additional flavor to the meat.)
Serve skewers on plates with rice and warmed sweet & sour sauce. (I warmed the glass bottle of sauce next to the fire in the fire pit with the plastic lid removed.) Enjoy!
