Mt. Rushmore (Day 8)
This campfire breakfast of peach crumble brought on cheers from every member of my family and strange looks from our curious neighbors.
I feel sorry for startling other campers and even worse that they were all slaving away cooking their breakfasts. I try to pack light and leave the kitchen sink at home, so this is simple, simple, simple. Just get your campfire going, do a little prep work, warm up your tootsies and get ready to dig in. (Of course, no one reading this will tell my family how simple it is to make my "camping crumble".)
Camping Crumble (for 4 people)
1 campfire
4 sheets of foil
1 lg & 1 regular can of peaches
2/3 bag of Udi's gluten free granola
If you have it: some brown sugar & cinnamon
Open the cans of peaches and drain the juice. Take 2 lg sheets of foil, place one on top of the other, fold up the 4 sides to create a "baking dish". Pour in peaches, top with granola (optional: sprinkle on some brown sugar & cinnamon). Place the other 2 sheets of foil on top, roll/crimp the edges so all 4 sheets are sealled shut. Place over fire or in hot coals. Cook for about 15-20 minutes until peaches are bubbly. Serve warm. Enjoy!
Cook's note: double up the foil so it does not tear. It would be horrible to watch you meal spill out into the fire and go up in flames.
