This evening I found myself wandering aimlessly around the grocery store hoping (well, really begging) for inspiration to jump in my shopping cart. I wanted that inspiration to taste yummy, be gluten free, and not take 2 hours to make. In a dazed state I ventured into the marinade isle (I know, I know, gluten free is not always ready to be had there), and found my inspiration. I spotted a jar of orange ginger marinade...mmmm...it really sounded good for about 15 seconds. That is how long it took me to scan the ingredients and spy wheat, glutenous preservatives and 5 other ingredients I could not even say, but that is all I needed. I spun around and gathered the following and ended up with a yummy gluten free kumquat glazed salmon (even my kids gobbled it down). I may have to try this on chicken next time.
Gluten/Wheat Free
ingredients
1lb salmon
1/3 cup kumquat jam (orange will probably work as well)
1 tablespoon gluten free soy sauce (i.e. La Choy), plus a little more to marinate
1 teaspoon seasoned rice vinegar
1/2 teaspoon fresh, grated ginger (best if frozen when grated)
pinch of red pepper
preparation
Drizzle gluten free soy sauce over salmon and set aside. Mix remaining ingredients in a small bowl. Cook/broil salmon until almost done then top with glaze and return salmon to oven and finish cooking. Enjoy.
