Black Hills, SD to Yellowstone, WY (Day 10)
We've spent the better part of this trip so far with cold evenings and rainy nights which begs for warm soup. This was a very impromptu meal and turned out satisfying our desire for a hardy warm meal.
If you do not want to spend the time, try Gluten Free Cafe canned gluten free soup, it is yummy! (picture of can below).
Simple Chicken Noodle Soup

1 Pre-cooked chicken breast (salted and cooked with yesterday's sweet & sour chicken)
Diced celery
Diced onion
Diced or grated carrot
1qt. gluten free chicken or veggie broth
Gluten free rice noodles (I used Glutino's)
Cook rice noodles according to directions and place aside. In a largish pot sauté celery, onion, and carrot with a little oil and salt. When tender add diced chicken. Warm then add broth. Bring to a boil then add noodles. Serve immediately. Enjoy!
